Letter to the Editor

Sir: Drs. Feinberg and Holzer have asked for clarification of the types of cheeses used by large pizza chain outlets. To the best of our knowledge, the cheese most commonly used is mozzarella cheese, which, strictly speaking, is an aged cheese. However, it appears to be one of the milder cheeses, and our previous analyses have shown relatively low tyramine levels in mozzarella.
